Teriyaki Chicken

Makes 2 servings
2 chicken breasts
2 Tbsp olive oil
4 Tbsp low-sodium soy sauce
1/2 cup onion (chopped)
2 garlic cloves (minced)
1/2 tsp ginger (grated)
Blend the marinade ingredients. Butterfly and tenderize the chicken breasts. Marinate for at least 4 hours to overnight. Discard the marinade and grill the chicken on each side for 3-4 minutes. Serve with your favorite steamed vegetables for a healthy and tasty meal.
