Roasted Potatoes
Ingredients:
-2-3 potatoes (russet, red, or Yukon gold)
-3 Tlbs olive oil
-1 tsp salt
-1/4 tsp pepper
-2 tsp dried basil
Directions:
Cut potatoes into bite-sized chunks. Mix remaining ingredients in large zippered bag. Add potatoes. Marinate for at least 30 minutes, or overnight.
Preheat oven to 425º. Spread potatoes on baking sheet and bake for 20-30 minutes until cooked through and lightly browned.
