Indian Inspired Lentil Soup
Ingredients:
1 Tbls unsalted butter
½ Tbls olive oil
1 large chopped onion
2 cloves minced garlic
3 cans chicken broth (or 6 cups water)
1 ½ cups dry green lentils
1 tsp curry powder
½ tsp cinnamon
salt and pepper to taste
½ cup fresh cilantro (optional)
Directions
In a large pot, heat butter and olive oil over medium heat. Add onion and garlic and cook, stirring constantly, for 1 minute. Add the broth, lentils, curry, and cinnamon, and bring to a boil, then reduce heat to a simmer.
Cook uncovered for 35-40 minutes, stirring occasionally, until lentils are fully cooked and tender. Season to taste with salt and pepper, ladle into bowls, and top with chopped cilantro if desired.
