Green Goodness

Ingredients:
2 Tbls olive oil
1/2 onion, chopped
4 cups mushrooms (quartered or sliced)
4 cups (packed) spinach
Directions:
Heat pan on medium heat, add olive oil and chopped onion. Saute over medium heat until onion begins to carmelize (5-10 minutes, stirring occasionally to prevent burning.)
Add mushroom, cook 5 minutes uncovered, cover 1-2 minutes until mushrooms begin to carmelize around the edges (stiring every minute or so.)
Add spinach, stir, and cover for 1 minute. Remove lid and stir mixture until spinach is wilted but still bright green.
Remove from heat and cool slightly. Then add to food processor, blender or magic bullet and blend until a paste.
Serve over fish, chicken, stir into sprimp, or use as a pasta sauce. So many ways to use Green Goodness!
