Chicken & Dumplings
Ingredients:
While simmering mix bisquick and milk in small bowl. Should be consistency of wet play-doh.
Add tablespoon sized drops of dumpling mixture on top of simmering veggies. Cover and cook for 10 minutes. Remove cover and continue to cook for 2-3 minutes. Dumplings should be moist on the outside and fluffy on the inside.
Serves 4-6
- 2-3 boneless, skinless chicken breasts
- 1 Tbls olive oil
- 1 can chicken broth
- 2-3 cans of vegetables (green beans and corn are our favs) You can also use fresh or frozen veggies, just simmer for an extra 5-10 minutes and add a bit of extra water.
- 2 cups bisquick
- ½ - ¾ cup 1% milk (you can use skim, 2% or whole…whatever you have around)
