The challenge is sometimes eating it fast enough. One GREAT and tasty way is to grill. Asparagus, zucchini, corn. So many options. The easiest way is to marinate them in a bit of italian salad dressing for 20 minutes. Then just stick them on the grill. It brings out a great flavor and everyone eats them up!
