Rustic Noodle and Garbanzo Beans
Ingredients:
8 ounces salad macaroni
1 tsp canola or olive oil
¼ cup pre-cooked bacon pieces (I get the Hormel brand at Costco. It is the best deal)
1 small onion, chopped
1 can diced tomatoes (if you can find them get fire roasted tomatoes)
Pinch red pepper flakes (a little extra if you like it hot)
1 can garbanzo beans (chickpeas), drained and rinsed
Directions:
Cook macaroni according to package instructions. Drain and reserve some of the cooking liquid. Meanwhile, heat oil in a large skillet. Add chopped onion and cook for 3-5 minutes until tender. Add bacon pieces. Add can of tomatoes and red pepper flakes. Simmer for 10-15 minutes. Add can of drained beans. Cook 1 minute. Add noodles to mixture and stir until coated, adding reserved cooking liquid as needed to loosen mixture.
