Savory Potato Pancakes
Ingredients:
1 white potato, peeled and grated
1 sweet potato, peeled and grated (sweet potatoes have white flesh, yams have orange/red flesh)
4 egg whites or 2 eggs
½ cup scallions minced (also known as green onions)
1 tsp Italian seasoning
Directions:
In a large bowl, combine potatoes, egg, scallions, and Italian seasoning. Add a small amount of olive oil in a nonstick skillet and heat for one minute. Drop potato mixture by tablespoonfuls into the skillet and flatten slightly (you will need to do more than one batch.) Cook until pancakes are golden brown, 5-6 minutes on each side.
