Jambalaya
Ingredients:
1-2 boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces smoked sausage, of your choice
8 ounces smoked ham, diced
1 green pepper, finely chopped
1 medium yellow onion, chopped
2 celery ribs, finely sliced
4 cloves garlic, minced
1 can tomato sauce
1 small can tomato paste
1 cup chicken broth
1 tablespoon dried parsley
1 1/2 teaspoons dried basil leaves
1/2 teaspoon dried oregano
1 1/2 teaspoons hot pepper sauce
1 teaspoon black pepper
salt, to taste
1 pound frozen cooked shrimp, no tail
4 cups cooked white or brown rice
Add everything to crock-pot except shrimp and rice. Stir until well combined. Cover. Cook on low 8 -10 hours (high 3-4 hours). During last 30 minutes add frozen shrimp. Serve over rice.
