Garden Taco Rice
Ingredients:
1 pound ground beef or turkey breast
½ onion, chopped
1 package (or ¼ cup) taco seasoning
1 ½ cup water
1 ½ cup thinly sliced zucchini
1 cup frozen corn
1 can diced tomatoes
1 ½ cup uncooked, instant brown rice
1 cups shredded cheddar
Directions:
In a large skillet, brown ground beef/turkey and onion; drain if needed. Stir in remaining ingredients except rice and cheese; bring to boil. Stir in rice. Reduce heat to low; cover and simmer 7 minutes or until liquid is absorbed, stirring occasionally. Remove from heat. Stir one last time and sprinkle with cheese. Cover and let stand for 2-3 minutes until cheese is melted.
