Fried Rice
Ingredients:
1 medium onion, chopped
½ cup meat of choice (cooked or raw) cut into bite-sized pieces
½ cup veggie of choice (cooked or raw) cut into bite-sized pieces
1 garlic clove, minced
2 eggs, beaten
4 Tbls soy sauce
2 Tlbs canola oil
4 cups cooked rice
4 scallions, minced (Optional)
Directions:
Marinate meat in 1 Tlbs soy sauce. Add ½ Tbls oil to pan. Add onion and cook until onion starts to turn brown, 1-2 minutes. Add any raw meat or veggies and cook for 1-2 minutes. Add any cooked meat or veggies and cook for additional 1 minute. Stir in garlic and remove from pan.
Put remaining oil in pan, heat until shimmering. Add rice. Stir-fry, breaking up any clumps, for about 2 minutes. Add egg and stir until scrambled and mixed throughout, about 1 minute. Return meat and veggies to pan and add remaining 3 Tlbs soy sauce (and scallions if using.) Stir to combine.
