Curry in a Hurry
-1 jar yellow curry sauce (Kikkoman makes a great one. I also love Trader Joe’s)
-2-3 chicken breasts, cut into bite-sized pieces
-3-4 cups various vegetables, cut into ½” pieces (suggestions: potato, sweet potato, carrots, zucchini, bell peppers, mushrooms, onions)
Directions:
Place chicken, veggies and curry sauce into a large skillet. Cover and simmer for 20-30 minutes until veggies are tender.
Serve over rice or with tortillas.
