Chinese Chicken Salad
3 cups of lettuce or spinach for each person. Sprinkle 3 ounces of canned chicken (drained) on each plate. 2/3 cup mandarin oranges and 1 1/2 Tbls sliced almond.
Dressing-Mix 2 Tlbs rice vinegar w/ 1 tsp sesame oil (per person).
Drizzle dressing over salad and enjoy!
This is enough for a dinner or lunch portion. Just halve the recipe for a side dish. Maybe alongside some teriyaki shrimp?
