Brown Sugar Cookies
Ingredients
o 14 tablespoons unsalted butter, divided
o 14 ounces dark brown sugar, divided ( 2 c packed)
o 1 3/4 ounces white sugar ( 1/4 c)
o 10 1/2 ounces all-purpose flour ( 2 c plus 2 tbsp)
o 1/2 teaspoon baking soda
o 1/4 teaspoon baking powder
o 1 tablespoon vanilla extract
o 1/2 teaspoon table salt
o 1 large eggs
o 1 egg yolk
Directions
1. Melt 10 T butter and heat until brown (2-3 minutes). Transfer to bowl & add 4T cold butter. Cool 15 minutes.
2. Add 1 ¾ cup dark brown sugar, vanilla, and beaten eggs to butter and mix.
3. Mix flour, baking soda, baking powder, and salt, and add to other ingredients.
4. Divide dough into 24 pieces. Roll each piece into a ball and roll in mixture of ¼ cup white sugar and ¼ cup brown sugar.
5. Bake 350 degrees for 12-14 minutes. One tray at a time and turn tray half way through baking.
6. Cookies are done when edge is set so that you can lift it slightly. Also, cookie will spring back when pressed half way between center and edge. Let sit on cookie sheet 5 minutes then transfer to cooling rack.
