Baked Potato Soup
This recipe was from the October 2010 Cooking Light magazine. I tweaked it ever so slightly. Hope you enjoy it!
Ingredients:
4 red potatoes
2 teaspoons olive oil
1/2 onion, chopped
1 1/4 cup chicken broth
3 Tbls flour
2 cups skim milk, divided
1/4 cup fat free sour cream
1/2 tsp salt
1/4 tsp pepper
3 bacon slices
1/3 cup shredded, reduced fat sharp cheddar cheese
4 tsp chopped chives
Directions:
-Pierce potatoes with fork. Microwave on high for 12 minutes. Cut if half, let cool slightly.
-While potatoes cook, heat oil in saucepan over medium-high heat. Add onion, saute until translucent (about 3 minutes), add broth.
-Combine flour and 1/2 cup of milk. Add to pan along with rest of milk (1 1/2 cup). Bring to a boil, stirring often. Cook 1 minute, will thicken. Remove from heat.
-Stir in sour cream, salt, and pepper.
-Cook bacon in microwave (on paper towel for 4 minutes) Blot grease with paper towel. Crumble bacon.
-Discard potato skins, coarsely mash potatoes into soup. Spoon into bowls and top with cheese, chives, and bacon.
