We went to the store tonight and got some Red Snapper from the fish counter. Joe said lime would go well with the fish so I made Cilantro Lime Snapper. It was really tasty (and that is saying a lot.) About five years ago I wouldn't eat anything that lived in water (except for the occasional tuna sandwich.) The flavors of the sauce were bold and fresh. I also dusted the filets with some chipotle chili powder that I really liked, but Zan said it was too hot:( Next time I will probably skip it, but I loved the smoky/hot flavor.) The recipe would work with most fish, so give it a try:)
Laid off from an accounting job in March 2009 after the birth of my third son, I was forced to take a long look at our budget. During my first year as a stay-at-home mom I found my passion: to help others with budgeting, saving money, organizing the family, and menu planning. Please join me on my journey!
